BREAKFAST HASH RECIPE

The perfect dish for that New Years day brunch…

 

BREAKFAST HASH RECIPE

Serves: 6 Difficulty Level: 1 (of 5) Prep Time: 15 Minutes Ready In: Less than an hour

 

INGREDIENTS:

•1 lb sausage (as spicy or mild as you like)
•2 cups new potatoes, peeled and chopped
•2 ounces red peppers, chopped
•2 ounces sweet onions, chopped
•6 eggs
•2 Tablespoons cream ( 1/2 & 1/2 is fine)

 

PROCEDURE:

•Crumble sausage into large skillet.
•Add potatoes, peppers and onion, and cook over low heat until sausage is browned and potatoes are fork-tender, stirring occasionally.
•Drain off any drippings.
•Whisk eggs and cream in small bowl until blended.
•Add to sausage mixture; scramble until eggs are set but not dry.
•Serve hot, and refrigerate leftovers.

 Serve with several types of toasted breads (I prefer rye) for a real good start to the new year…….don’t forget the Tabasco !
