  1. Hot Off The Shelf: Gear up for Cupcake War

    I remember when I started doing cooking classes at J.E.S. Restaurant Equipment one of the most asked questions was, “why all the new interest in cooking?” The answer at that time was two words, “Food Network”.     Well, they have done it again with the huge success of the show “Cupcake Wars”.     First off is the simple to use mini cupcake pan — just fill the mold with batter and bake swirled tops and ribbed bottoms for six delicious easy-to-fill cupcakes.     Hot Off The Shelf, or should I say “Cool On The Table” ?

    Every once in awhile a product comes down the line that makes you think, “why didn’t I think of that”, here,  my friends,  is just such a product. Such a simple idea for keeping your beverages at that cool serving temperature.

    Frieling USA Inc. has introduced it’s new line of transparent plastic carafes with the innovative “Cooling Coaster”.
    Actually this is an addition to their award winning Flow Carafe. Whereas the original was a elegant glass and stainless steel offering, the newest line is made of a clear plastic and gives you the choice of 4 colors for the cooling coaster. A re-freezable disk is inserted into your choice of black, red, yellow or white coaster that keeps the beverage cool for up to four hours.   3. DYNAMIC SALAD SPINNER

    SD99 Dynamic International Salad Spinner

    Let’s face it, most restaurant meals and catered affairs begin with a salad. The salad course is the first example of your culinary expertise that the customers or diners will have and probably the easiest way to “blow” that impression is to serve a wet and watery helping of salad greens. It not only detracts from the appearance of the salad, but greatly affects the taste of the customers choice of dressings.

    Some say “why wash? I’ve already purchased pre-washed salad greens.” I need only remind you of the outbreaks of food poisoning we have experienced in the past few months. Beyond that, it is the simple reason that washing and soaking in cold water will revive lettuce to a more fresh appearance and taste.

    I say the best way to eliminate this problem is through the use of a salad spinner, here at J.E.S. we offer the Dynamic Mixer model SD92. It will spin 6-8 heads of lettuce at a time.
