  1. GRILLED PIZZA WRAPS RECIPE

    A quick and easy answer for summertime pizza at home without the heat of the oven

     

    GRILLED PIZZA WRAPS RECIPE

    Serves: 8 Difficulty Level: 1 (of 5) Prep Time: 10 Minutes Ready In: Less than 30 Minutes

     

    INGREDIENTS:

    •2 tablespoons margarine, softened
    •8 (10 inch) flour tortillas
    •1 (16 ounce) package shredded Cheddar-Monterey Jack cheese blend
    •1/2 cup pizza sauce
    •4 ounces sliced pepperoni

    PROCEDURE:

    •Heat a large skillet over medium-low heat.
    •Spread margarine over one side of a tortilla, and place it margarine-side down in the skillet.
    •Spoon a tablespoon of pizza sauce onto half of the tortilla.
    •Sprinkle 1/2 cup of shredded cheese over the sauce, and top with a few slices of pepperoni.
    •Fold the clean half of the tortilla over the filling, and cook until golden on each side.
    •Repeat with remaining tortillas.

     Super fast, delicious, very easy! Tortillas filled with your favorite pizza toppings, and fried like quesadillas. Great for appetizers, but I’ll bet the kids will make them a meal.



  2. FRUIT PIZZA RECIPE

    Any kid would love pizza for dessert, now you can let it happen.

     

    FRUIT PIZZA RECIPE

    Serves: 8 Difficulty Level: 1 (of 5) Prep Time: 30 Minutes Ready In: 30 Minutes

     

    INGREDIENTS:

    •1 (18 ounce) package refrigerated sugar cookie dough
    •1 (8 ounce) package cream cheese, softened
    •1 (8 ounce) container frozen whipped topping, thawed
    •2 cups sliced fresh strawberries
    •1/2 cup white sugar
    •1 pinch salt
    •1 tablespoon cornstarch
    •1/2 cup orange juice
    •2 tablespoons lemon juice
    •1/4 cup water
    •1/2 teaspoon orange zest

    PROCEDURE:

    •Preheat oven to 350 degrees F.
    •Slice cookie dough and arrange on greased pizza pan, overlapping edges.
    •Press dough flat into pan.
    •Bake for 10 to 12 minutes.
    •Allow to cool.
    •In a large bowl, soften cream cheese, then fold in the whipped topping.
    •Spread over cooled crust.
    •You can chill for a while at this point, or continue by arranging the fruit.
    •Begin with strawberries, sliced in half.
    •Arrange in a circle around the outside edge.
    •Continue with fruit of your choice, working towards the middle.
    •If bananas are used, dip them in lemon juice so they don’t darken.
    •Then make a sauce to spoon over fruit.

    For the Sauce:

    •In a saucepan, combine sugar, salt, corn starch, orange juice, lemon juice and water.
    •Cook and stir over medium heat.
    •Bring to a boil, and cook for 1 or 2 minutes, until thickened.
    •Remove from heat, and add grated orange rind.
    •Allow to cool, but not set up.
    •Spoon over fruit.
    •Chill for two hours, then cut into wedges and serve.

     A few summers back I did a “Culinary Boot Camp” for a group of kids age 9-12 years, this was the hit of the week.



  3. LASAGNA SOUP RECIPE

    This recipe tastes surprisingly like lasagna without the noodles. Sounded interesting thought I would share.

     

    LASAGNA SOUP RECIPE

    Serves: 8 Difficulty Level: 1 (of 5) Prep Time: 20 Minutes Ready In: 1 Hour 20 Minutes

     

    INGREDIENTS:

    •1 pound ground beef
    •5 cups water
    •1 (14.5 ounce) can diced tomatoes, drained
    •1 1/2 cups quartered fresh mushrooms
    •3/4 cup chopped green bell pepper
    •1/2 cup diced onion
    •1 clove garlic, crushed
    •1 teaspoon basil
    •salt and pepper to taste
    •3/4 cup crumbled feta cheese

    PROCEDURE:

    •In a large pot over medium heat, cook and stir the ground beef until evenly brown; drain.
    •Mix the water, tomatoes, mushrooms, green bell pepper, onion, and garlic into the pot with the beef.
    •Season with basil, salt, and pepper.
    •Bring to a boil, reduce heat, and simmer 45 minutes.
    •Mix the feta cheese into the soup, and continue cooking about 15 minutes before serving.

     Makes a “souper meal” when served with fresh made garlic bread for dipping.



  4. BUBBLE PIZZA RECIPE

    Here is one the kids can do with just a little supervision on your part.

     

    BUBBLE PIZZA RECIPE

    Serves: 8 Difficulty Level: 1 (of 5) Prep Time: 20 Minutes Ready In: Less than an Hour

     

    INGREDIENTS:

    •1 pound ground beef
    •1/4 pound sliced pepperoni sausage
    •1 (14 ounce) can pizza sauce
    •2 (12 ounce) packages refrigerated buttermilk biscuit dough
    •1/2 onion, sliced and separated into rings
    •1 (10 ounce) can sliced black olives
    •1 (4.5 ounce) can sliced mushrooms
    •1 1/2 cups shredded mozzarella cheese
    •1 cup shredded Cheddar cheese

    PROCEDURE:

    •Preheat oven to 400 degrees F
    •Grease a 9×13 inch baking dish.
    •Place ground beef in a large, deep skillet.
    •Cook over medium high heat until evenly brown.
    •Stir in pepperoni, and cook until browned.
    •Drain excess fat.
    •Stir in pizza sauce.
    •Remove from heat, and set aside.
    •Cut biscuits into quarters, and place in the bottom of baking dish.
    •Spread meat mixture evenly over the biscuits.
    •Sprinkle top with onion, olives and mushrooms.
    •Bake uncovered in preheated oven for 20 to 25 minutes.
    •Sprinkle top with mozzarella and Cheddar cheese.
    •Bake an additional 5 to 10 minutes, until cheese is melted.
    •Let stand 10 minutes before serving.

  5. UPSIDE DOWN PIZZA BAKE RECIPE

    Interesting “spin” on an old stand-by…

     

    UPSIDE DOWN PIZZA BAKE RECIPE

    Serves: 8 Difficulty Level: 2 (of 5) Prep Time: 10 Minutes Ready In: Less than an hour

     

    INGREDIENTS:

    •2 lbs ground beef
    •1 ½ cups chopped onions
    •1 cup green peppers (or combination) or
    •1 cup of red peppers (or combination) or
    •1 cup of yellow peppers (or combination)
    •2 cups spaghetti sauce
    •2 tablespoons Italian spices
    •1 package sliced pepperoni
    •grated mozzarella cheese

    CRUST:

    •2 eggs
    •1 cup of milk
    •1 ½ tablespoons oil
    •1/2 cup Parmesan cheese

    PROCEDURE:

    •Fry beef, onion and peppers until beef is no longer pink.
    •Add sauce and spices.
    •Turn into a greased 9×13-inch pan.
    •Arrange pepperoni slices over beef mixture.
    •Cover with cheese slices.

    CRUST PROCEDURE:

    •Beat eggs in bowl, add milk and oil.
    •Beat on low speed until blended.
    •Add flour.
    •Beat.
    •Pour over cheese.
    •Smooth top.
    •Sprinkle with Parmesan cheese.
    •Bake uncovered at 400ºF for 20 minutes.
    •Let stand for 20 minutes.
    •Serve

    This should give the kids a different perspective on one of their favorites

  6. White Garlic Pizza Recipe

    A sure hit with the younger crowd in the house…..you can even let them make it !

    WHITE GARLIC PIZZA
    Servings: 8 pieces Difficulty Level 1 (of 5) Prep Time: 15 Minutes Ready In: 40 Minutes

    INGREDIENTS:
    • 1 12″ frozen pizza crust
    • 1/4 cup unsalted butter, softened
    • 1 Tbsp. garlic powder
    • 1/4 cup grated Parmesan cheese
    • 1 cup cooked chicken, shredded
    • 1/2 lb. mushrooms, sliced
    • 3/4 cup shredded mozzarella cheese
    • 1/2 cup havarti cheese, grated
    • 1/2 cup Provolone cheese, grated

    PROCEDURE:
    • Allow crust to thaw and rise according directions
    • Preheat oven to temperature 400°F
    • Place thawed pizza round on a 12 inch pizza pan sprayed with nonstick cooking spray or pizza stone.
    • Bake 10 minutes. Spread crust with butter. Sprinkle with garlic powder, Parmesan, chicken and mushrooms. Cover with grated cheeses and bake for another 15 minutes
    • Supply them with their favorite beverage and stand back…

  7. Chicken – Garlic Pizza Recipe

    Interesting variation on the classic pizza……skip the tomato sauce !

    Chicken-Garlic Pizza
    Serves: 6 Difficulty Level: 2 (of 5) Prep Time: 15 Minutes Ready In: 35 Minutes

    INGREDIENTS:
    • 1 skinless, boneless chicken breast half
    • 2 tablespoons butter or margarine, softened
    • 2 cloves garlic, minced
    • 2 tablespoons chopped green onion
    • 1/2 teaspoon dried basil
    • 1 (10 ounce) can refrigerated pizza crust dough
    • 2 plum tomatoes, diced
    • 1/2 cup chopped fresh cilantro
    • 1/2 cup ricotta cheese
    • 1/4 cup grated Parmesan cheese

    PROCEDURE:
    • Place the chicken breast in a saucepan with enough water to cover. Bring to a boil, and simmer until no longer pink, about 20 minutes.
    • Drain and cool slightly, then cut into strips.
    • Meanwhile, in a small skillet over medium heat, melt the butter with garlic, onion and basil. Pour into a chilled dish to cool, and refrigerate until set.
    • Preheat the oven to 350 degrees F
    • Roll out the pizza dough, place onto a pizza pan or other baking sheet, and spread the herb butter over the surface using the back of a spoon.
    • Arrange chicken on top, then dot with ricotta cheese. Top with tomato slices, cilantro and Parmesan cheese.
    • Bake for 15 to 20 minutes in the preheated oven, until crust is browned and center is cooked through.
    • *Have also drizzled a little extra virgin olive oil over it when it comes out of the oven for a little more flavor.

    Some things you might want to consider picking up if you enjoy making pizza at home: pizza cutter, pizza stone and pizza peel
