  1. BBQ Rubbed Sweet Potatoes

    An interesting twist to the everyday sweet potato.

     

    BBQ RUBBED SWEET POTATOES

    Serves: 4 | Difficulty Level: 1 (of 5) | Prep Time: 10 Minutes | Ready In: 1 1/2 Hour

     

    INGREDIENTS:

    • 2 teaspoons paprika
    • 2 teaspoons chili powder
    • 2 teaspoons BBQ spice
    • 1 teaspoon garlic powder
    • 1 teaspoon ground cumin
    • 1 teaspoon poultry spice
    • 1 teaspoon salt
    • 1 teaspoon dried oregano
    • 1/2 teaspoon onion powder
    • 4 medium sweet potatoes
    • 4 tablespoons salted butter
    • 4 tablespoons light brown sugar

    PROCEDURE:

    • Preheat the oven to 375 degrees F.
    • Line a baking sheet with aluminum foil.
    • In a medium bowl, mix together the paprika, chili powder, BBQ spice, garlic powder, cumin, poultry spice, salt, oregano, and onion powder.
    • Wash each sweet potato thoroughly under cold running water.
    • Carefully pierce each potato, 4 to 5 times, with the tip of a small knife.
    • With the sweet potatoes still wet, dredge each potato into the spice rub and place on the prepared baking sheet
    • Bake the sweet potatoes for about 1 hour 20 minutes, or until they are very tender when pierced with a fork.
    • To serve, split each potato open, lengthwise, and dollop each with 1 tablespoon of butter and 1 tablespoon of brown sugar.

  2. CROCKPOT MAPLE BBQ CHICKEN SANDWICHES

    A great alternative to pork bbq, I say “alternative” because there is no “substitute” for pork bbq….(in the South)

     

    CROCKPOT MAPLE BBQ’D CHICKEN

    Serves: 4 Difficulty Level: 1 (of 5) Prep Time: 5 Minutes Ready In: 8 Hours

     

    INGREDIENTS:

    •1 Cup ketchup
    •1/2 Cup maple flavored syrup
    •2 Tablespoon prepared mustard
    •2 Tablespoon Worcestershire sauce
    •2 Teaspoon lemon juice
    •1/2 Teaspoon chili powder
    •1/4 Teaspoon garlic powder
    •4 boneless, skinned chicken breasts

    PROCEDURE:

    •Place all ingredients in crockpot and cook on LOW for about 7 to 8 hours or until chicken is done.
    •Remove meat, shred and return to sauce.
    •Place on buns for sandwiches or serve over hot rice.

     I have also used this recipe for left-over cooked chicken, and I’ll bet it will work equally as well with the last of that left-over Thanksgiving turkey.



  3. BBQ Beef Tenderloin Recipe

    Let’s get ready for the Labor Day week-end… Pair this up with your favorite potato or pasta salad and you’ve got a meal for the crowd.

     

    BBQ BEEF TENDERLOIN

    Serves: 10-12 Difficulty Level: 2 (of 5) Prep Time: 5 Minutes Ready In: < 90 Minutes

     

    INGREDIENTS:

    •1 Tbsp. fennel seeds, crushed
    •2 tsps. salt (optional)
    •1/2 tsp. ground ginger
    •1/2 tsp. crushed red pepper
    •2-1/4 lbs. beef tenderloin roast

    PROCEDURE:

    •Combine first 4 ingredients in a bowl. Rub spices into beef.
    •Meat can be covered and refrigerated overnight before grilling.
    •Cook beef in covered grill 30-40 minutes per 1 lb over medium heat, turning occasionally, until meat thermometer reads 135°F.
    •Let stand 5-10 minutes before slicing thinly. (Temperature will go up ten degrees while standing.)
