Best ever sausage recipe for game meat.

 

VENISON SAUSAGE w/ MAPLE & APPLES RECIPE

Serves: 15 Pounds Difficulty Level: 1 (of 5) Prep Time: 10 Minutes Ready In: 10 Minutes

 

INGREDIENTS:

•10 Pounds vension (cut into 1″ cubes)
•5 Pounds country sausage (mild)
•8 Ounces PURE maple syrup
•5 Ounces dried apples
•4 Ounces mild sausage seasoning mix * (1/2 bag)
•* We used A.C. Legg Old Plantation Pork Sausage Seasoning Blend #10

PROCEDURE:

•Grind the venison through a 3/16″ grinding plate
•Mix thoroughly by hand with the country sausage and 4 oz. of seasoning mix
•Mix dried apples into the mix and pour the maple syrup into the mix
•Re-grind through same grinding plate.
•Sausage is now ready to cook or freeze.*

 ** This sausage has NO preservatives, it must be portioned and frozen if not to be used within a day. We recommend vaccuum sealing in 1-2 pound packs to retain the freshness.
