For many years, Americans have been using boiler steamers in their commercial kitchens. These items proved to be safer than pressure steamers. One of the biggest drawbacks for boiler-based steamers is that both gas and electric models use electric elements that are soaked in water. This leads to scale build-up elements that create an insulated coating, which cuts down heat output and can even lead to burn-outs and a higher need for replacement parts.
Due to this aforementioned problem, the first boilerless steamer was put on the market in the early 90s. These products proved to be successful and used less BTU output than most boiler-based models.

Both the C24EO3-1 and the C24EO5-1 are convection steamers that are Energy Star ® certified. The boilerless feature eliminates the necessity to get rid of lime particles. The connectionless feature eliminates the need for a water or drain line. These items have stainless steel cooking compartments with coved interior corners and a heavy duty door latch and mechanism.
