Some of you may not realize it, but in a typical restaurant the dishwasher consumes over two-thirds of all the water usage. Nearly one-half of the water used in dish washing is consumed by the pre-rinse spray valve.

What is a pre-rinse spray valve?

It's a hand held device that uses a spray of water to remove food and waste from dishes before cleaning them in a commercial dishwasher. They consist of a nozzle, a squeeze lever that controls the water flow, and a dishwasher bumper guard.

Using a low-flow pre-rinse spray valve helps minimizes the water consumption, water heating energy, and sewer charges. These pre-rinse spray valves save water while maintaining an equal cleaning performance over other spray valves. They help save energy by reducing the amount of water that needs to be heated. These valves are based on flow rate and cleaning performance. A low-flow spray valve with equal cleaning performance indicates a more-efficient spray valve model. The national standard for all pre-rinse spray valves made after 2006 have a flow rater of 1.6 gpm (gallons per minute) or less. Most spray valves that have a flow rate of 1.6 gpm or less at 60 psi are ideal.

The improved spray valve designs now allow for effective cleaning as much as the standard models. The California Urban Water Conservation Council has one of the largest pre-rinse spray valve programs in the country (Rinse & Save), which has a cleanability requirement of 21 seconds or less.
