BUYING A TOASTER? HERE’S WHAT YOU NEED TO KNOW | TOASTMASTER | STAR-MAX

Before the very first toaster became a household phenomenon in home kitchens, the idea of “toasting” bread over an open flame was discovered and thus toast was born. It has never been determined who invented the first toaster but it was General Electric in 1909 that introduced the very first toaster to the market. Since then, the conventional toaster has taken on many shapes and sizes and now there are a myriad of toasters available to the everyday consumer.

The three main types of toasters are pop-up toasters, toaster ovens, and conveyor toasters. Pop-up toasters can be designed for either commercial or residential use. These toasters are made for quickly toasting bread, frozen waffles and other foods evenly. The pop-up toaster models from Toastmaster come with either two or four toasting slots, which cuts down the time it takes to toast your bread. Each of the toasting chambers are equipped with oven guide wires and lowering racks. The bagel and bun toasters have wider slots in the top. These toasters only provide one sided toasting. Toastmaster also has combo toasters that allow the operator to toast bread, Texas toast, and bagels at the same time. These toasters have a front pullout crumb tray that allows easy cleaning. These pop-up toasters have insulated ceramic etched foil heaters are on one or both sides of each toasting chamber, depending upon the model. Toaster ovens or red toasters are designed with the idea of toasting a variety of food types other than bread, bagels, etc. These toasters act similar to an oven where the food items are placed on a rack and the food can either be heated from below the rack, above the rack, or both. Star-Max has an oven toaster that stays cool to the touch with its forced convection feature. This increases the productivity of the oven by circulating pre-heated air into the oven chamber. The heating elements are quartz infared and provide consistent heating of products compared to other traditional heating elements. The conveyor toaster or a pass through toaster is hands down the fastest type of toaster. These toasters are designed to be in a commercial kitchen where a high volume of toast is necessary for productivity. The conveyor toaster can toast up to on average 350 to 400 slices of bread in one hour. As the name suggests, the conveyor toaster has a conveyor belt that the bread is placed on. The conveyor belt moves the bread through the heating element to be toasted to perfection. The TC17 and TC21 both have a large chamber opening that allows toasting of a variety of products including buns, bagels and muffins. These conveyor toasters are equipped with a loading rack that is angled to continuously feed the product into the toaster with ease. Safety always comes first in any commercial kitchen that is why these models have an auto cool-down feature, which allows the fan inside the toaster to cool the exterior of the toaster when the unit is turned off. The heating elements can be controlled individually for either top or bottom, which also controls the lightness or darkness of the product. The standby feature during inactive hours reduces the energy use.

Every good restaurant needs a great menu. If you are a restauranteur, devising a great menu should be at the top of your priority list. The menu can either turn your customers away immediately or keep them coming back well into the future. What most restaurant owners fail to realize is that a good menu is more than just a list of entrees and appetizers on paper. It should complement the overall look and atmosphere of your restaurant with a good design and layout. It should also be updated regularly to adjust for cost and determine which items sell and which items aren't.

CALIBRATE YOUR RESTAURANT THERMOMETER

Thermometers are a necessity in any commercial kitchen. A myriad of things can go wrong without a thermometer. The only thing worse than not having a thermometer is having one that is not calibrated correctly. Thermometers lose their accuracy over time and use. Even if your thermometer is only a few degrees off, then you're running the risk of health problems, over cooked food, and overall calamity in a commercial kitchen; all this can be easily avoided by simply recalibrating your thermometer.

When do you need to recalibrate your thermometer?

  • If you drop it, then you would certainly need to recalibrate it.
  • If you've never used it before, then it's always good to recalibrate it.
  • If you use the same thermometer to measure both cold and hot temperatures.
  • Daily or weekly if you use the same thermometer multiple times.

There are a couple of ways to check and see if your thermometer needs to be calibrated. The freezing point method is considered the best way to test this. To check it using this method, fill an insulated glass with crushed ice and add a little water. Let the thermometer sit for five minutes and then insert the most sensitive part of the thermometer into the cup. Make sure the thermometer is in the middle of the glass and at least one inch from the sides, bottom, and top of the glass. Hold the thermometer there for 30 seconds or if it's a digital thermometer wait to hear a beep. Your thermometer should be reading 32ºF after thirty seconds. If this isn't the case, then you need to recalibrate your thermometer.

The other way to check the calibration of your thermometer is the boiling point test. You start by boiling six inches of water. Once the water has reached a boil, stick the sensor part of the thermometer into the middle of the water, taking care to keep it at least two inches from the sides, top, and bottom. After 30 seconds, the thermometer should read 212ºF. If this isn't the case, then your thermometer needs to be recalibrated.

How Do You Calibrate A Thermometer?

Dial thermometers, like the Taylor Precision 6081J5, have a tiny screw or nut that adjusts the dial to the correct temperature. To calibrate this type of thermometer, turn the adjuster until the dial reads the correct temperature according to the method you're using to calibrate.

Digital thermometers, like the Taylor Precision 9848FDA, have a reset button. Push that button when you're at either of the aforementioned temperature points and your thermometer is ready to go.

It's best to plan a regular schedule in your commercial kitchen in order to ensure the calibration is done correctly. Also, you need to keep in mind that the boiling point temperatures change by elevation.
