Convection cooking lends itself well to the restaurant environment, because it's faster than conventional cooking,and you're busy. This electric Platinum Series Convection Oven, which is made of stainless steel around an angle iron frame, has a 60/40 dependent door with a double pane glass window, so you can check on your foods as they cook. Two interior lights enhance your view of your cooking even more. The interior is of porcelain enamel, and the baflfes can be removed, so cleaning isn't challenging. It's a full-size, single-deck unit with 6 shelves to contain 12 full size sheet pans. A 2 speed fan has been added to soften convection air's high velocity, so that more delicate foods can be baked. A food probe allows you to cook meats to their safe internal temperature without over-cooking them. The temperature range of 100-500F is reached with the use of a 10kw heating element. An indicator light informs you when the correct temperature for beginning to cook has been reached. There's a 60 minute count-down timer, and an alarm which lets you know when cooking is complete. The oven and its functions are electronically controlled. It's placed on 25 inch bullet legs.
