This one is constructed of stainless steel, ensures the strength and longevity of the piece of equipment. The 625W wells are thermostatically controlled with dial controls, which is excellent, because that means the temperature of the well doesn't shift with the temperature of the pan. The temperature in the pan changes rapidly every time hot food is added, and slowly as the food is served. Temperature in a thermostatically controlled well remains largely constant through these changes, and rebounds very quickly if it is affected. Fiber insulation on the sides, in between the wells and under the elements goes even a step farther in maintaining consistent temperatures.This unit has a standard drain, and a drip-free flange which inhibits dripping around the drop-in, keeping your work area dryer and cleaner. The unit operates either moist or dry, which makes it the right choice for any number of foods. Wide corners simplify cleaning and make your life easier in the process.
