It's sturdily built of 18/8 stainless steel for long life, and thermostatically controlled with dial controls, and that's good because it ensures that the temperature of the 1000W wells won't waver as the temperature of the pan wavers due to hot foods being added during refilling and foods being removed during serving. Thermostatically controlled wells hold their own with this, and if they are affected at all, they rebound very quickly to their intended temperature. The fiber insulation surrounding these wells on all four sides, and even on the bottom and between the wells is also a great factor in their ability to retain temperature. The unit operates either moist or dry, which means any food you're wanting to store and serve here can be kept at proper temperature and consistency.
The standard drain offers individual drain controls, which is also a a great strength, because if repairs are needed, you only have to shut down the affected well or drain. When it comes to cleaning, this unit definitely holds its own. The drip-free flange prevents dripping around the piece, keeping the area cleaner and dryer, and the wide corners make cleaning simple because foods can't get wedged into them.
