Blending the swiftness of convection with the softness of steam has proved to be a winning idea for Alto-Shaam. Built of stainless steel, this countertop gas Prodigi Pro Combination Oven/Steamer arrives with 5 stainless wire shelves which make room for 10 half size sheet pans or 10 full size hotel pans. This is a boiler-free oven, so the maintenance, operational costs and down time associated with a boiler are eradicated. Three power levels let you adjust for times of peak power usage in your restaurant. The unit requires zero clearance, so when it's added to your kitchen line, it will occupy the least amount of floor and hood space possible. SafeVent is incorporated for your safety. It's the automatic ventilation of steam just prior to the end of the cooking cycle. The oven is placed on adjustable legs with bullet feet. All of these advancements are influenced by EcoSmart technology, so electricity and water are used cautiously in the cooking and cleaning cycles, which protects the environment and reduces your energy usage.
