Making delicious foods convenient is the purpose of the Slo Cook & Hold Oven. A compact model such as this one, which has integrated handles and rests on rubberized feet, can be handily carried from one venue to the next and stacked on top of nearly any piece of equipment. Stainless steel construction makes it easily strong enough to hold its 36 lb., or 3 full size pan capacity. Two stainless steel side racks and shelves offer a total of 5 pan positions. There's also a stainless steel drip pan with a drain. A probe is included, so that you have the option of cooking either by time or temperature, so you can cook several foods at once, or you can cook meats to a specific temperature to ensure their safety without dehydrating them. Halo Heat is the method used for cooking and holding, and its motionless warmth won't blend flavors or damage foods. Each function of the unit has setting keys with corresponding indicator lights and temperature control keys so you know when a function is in use, and you control its temperature. The cooking temperature range is from 200-325F, while the holding range is from 60-205F. The probe measures an internal temperature range of 50-195F. There are also 8 programmable keys for storing recipes and cooking instructions. One power switch sets the machine to use, and a lock-out feature for protecting your programmed settings. Oven hoods, outside vents and fire extinguishers aren't necessary for this oven in most locations, because outside emissions of grease-laden air are less than UL established standards.
