A fresh and healthy twist on something that was already wonderful.

Serves: 8
Difficulty level: 1 (of 5)
Prep Time: 15 Minutes
Ready In: 1 Hour

INGREDIENTS:
  • 1 large mango, diced
  • 3 Granny Smith apples, diced
  • 1 cup honey (locally produced is best)
  • 1 teaspoon lemon juice
  • 1 tablespoon crushed red pepper
  • 1 tablespoon finely chopped cilantro
PROCEDURE:
  • Dice your fruits.
  • Mix the rest of your ingredients so you aren't stirring delicate fruits as often.
  • Coat fruit with topping mixture and stir gently but thoroughly, making sure to coat fruit well, as lemon juice prevents browning.
  • Chill and serve with chips, on sandwiches, or as a relish with greens or beans.
Like all salsas, it's colorful and healthy, but it's also fruit-based, and a novel approach to making nutritious foods appealing.Enjoy,Chef PhilChef's thought: If you want a less spicy option, substitute peppers & cilantro for freshly chopped mint leaves.
