- Black-eyed peas symbolize coins or wealth
- Greens (typically collard greens or boiled cabbage) symbolize money or good fortune
- Ham or pork symbolize prosperity
- Cornbread symbolizes gold
Serves: 6-8
Ingredients:
- 1/2 lb smoked sausage
- 6 slices bacon, chopped
- 2 cans black-eyed peas, undrained
- 3 cups chicken broth
- 2 cups long grain rice, uncooked
- 1-1/2 cups ham, diced
- 1 cup onion, chopped
- 1/2 cup green bell pepper, chopped
- 1/4 cup celery, chopped
- 1/4 cup green onion, chopped
- 1 Bay leaf
- 1 teaspoon minced garlic
- 1 teaspoon black pepper
- 1-1/2 teaspoon salt
- 1/4 to 1/2 teaspoon Cajun seasoning
- Hot sauce, optional garnish
Directions:
- Place the bacon into a Dutch oven and sauté for 5 minutes or until soft.
- Add in the garlic and cook for another minute or so.
- Add in the ham and sausage and cook for 3-4 minutes. Then add the chicken brother and bring the pan to a boil.
- Stir in the rice and green onion. Season with salt, pepper, and Cajun seasoning.
- Add the bay leaf and bring the mixture back to a boil. Cover, reduce the heat, and let simmer for 30-35 minutes.
- Remove from heat and let sit covered for another 10 minutes before serving.
- Fluff with a fork and add hot sauce as a garnish if desired.
