BRAISED BEEF
SHORT RIBS
Serves: 4
Difficulty Level: 1 (of 5) Prep Time: 10 Minutes Ready In: 5 Hours
INGREDIENTS:
•4
lbs beef short ribs
•1 tbsp kosher salt
•Pepper to taste
•¼ cup olive oil
•2 large carrots, peeled and sliced into ½-inch thick coins
•1 medium onion, sliced
•2 cups of robust red wine (cab or merlot)
•1 celery stalk, chopped
•1 leek, washed and sliced crosswise
•8 cloves garlic, sliced
•1 small bunch fresh thyme
•6 cups water
PROCEDURE:
•Preheat
the oven to 325 degrees.
•Liberally season the short ribs on both sides with salt and pepper.
•Heat a medium-sized roasting pan (8 to 12 quarts) to medium high.
•Add the oil, and brown the short ribs on both sides.
•Remove the short ribs temporarily, and add the sliced carrots and onions.
•Stir for two minutes, and add the red wine.
•Reduce to a syrup (about five minutes), then add the leek, garlic cloves,
thyme, and water.
•Add the short ribs and bring to a boil.
•Reduce to a simmer, cover, and place on the lower rack of the oven.
•Cook for three to four hours or until the meat almost falls off the bones.
•Strain the cooking juices and reduce the liquid to a sauce consistency; adjust
the seasoning to taste.
•Keep the meat warm.
•Serve, spooning the sauce over the meat.
