This is savory and a little "dark", but it's also healthy, with a "comfort food" feeling. It works beautifully as a side dish or a simple meal.

Serves: 4 to 8 Difficulty level: 1 (of 5) Prep Time: 30 Minutes Ready In: 30 Minutes



INGREDIENTS:

  1. 1 Large head fresh broccoli
  2. 1 Lb bacon (I prefer Applewood Smoked)
  3. 1 or 2 large red onions
  4. 1 lb sharp cheddar cheese
  5. 1 cup mayonnaise
  6. 1 cup Blackberry Manischewitz

PROCEDURE:

Salad:
  1. Fry bacon. Set aside on paper towels to cool.
  2. Thoroughly rinse broccoli. Remove thicker stalks, and peel thinner ones as much as possible. Chop broccoli into small, salad-sized pieces. Toss into a large salad bowl.
  3. Peel and dice onions, and add them to the broccoli.
  4. Grate the cheese, and toss it into the bowl with the other ingredients.
  5. Crumble the bacon, which should be cool by now, and add it to the first three ingredients.
Dressing:
  1. Heat wine and mayonnaise in a small sauce pan, on medium heat.
  2. Stir gently but constantly until the mayonnaise melts and becomes creamy. (This only takes a few minutes.)
  3. Pour smooth dressing over salad and serve warm, or refrigerate and serve later. (It’s just as good cold the next day.)

The only time this hasn't been completely finished in one meal is when I was the only one eating.
