Brownies and cookies are two popular desserts. Both are easy to make at home and taste delicious. This recipe combines both desserts into one and makes for the perfect treat to indulge in while at home for the foreseeable future.
Serves: ~36
Ingredients:
- 12oz bittersweet chocolate chips
- 3 large eggs
- 1 cup sugar
- 3/4 cup flour
- 1/2 cup butter
- 1/2 cup mini semisweet chocolate chips
- 1/4 cup brown sugar
- 1/4 cup unsweetened cocoa powder
- 1 tablespoon vanilla extract
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
Directions:
- Melt the bittersweet chocolate chips and butter in a saucepan on low heat, stirring constantly until the chips and butter are melted and combined. Remove from heat and set aside.
- In a large mixing bowl, beat together the eggs, both sugars, vanilla extract, baking powder, and salt until the mixture is thick and creamy.
- Gradually mix in the melted chocolate and stir until integrated.
- Stir in the flour and cocoa powder until they are just combined.
- Add mini chocolate chips and stir to combine. The batter should look and move like a thick brownie batter.
- Cover the batter and chill it for half an hour or so.
- Preheat the oven to 350°F. Line two baking sheets with parchment paper or silicone baking mats.
- Use a cookie scoop or large spoon to drop the batter on the baking sheets, leaving about two inches between each cookie.
- Bake for 8-10 minutes. The cookies should be set along the edges but not quite yet set in the middle. The crackly crust brownies are known for having should form as the cookies cool. If overbaked, the cookies won't become crackly or fudge-y as they cool.
- Serve.
