
A less spicy recipe than
the traditional buffalo style, and not near as messy.
CHICKEN BREASTS GLAZED w/ HOT PEPPER
JELLY
Serves: 4 Difficulty Level: 2 (of 5) Prep Time: 10 Minutes Ready
In: Less than 30 Minutes
INGREDIENTS:
•4 Tablespoons hot
pepper jelly
•1 Teaspoon Dijon style mustard
•4 Boneless, skinless chicken breasts, pounded lightly to even thickness
•4 Tablespoons unsalted butter
•2 Tablespoons fresh lemon juice
PROCEDURE:
•In a small bowl,
combine the pepper jelly and mustard, set aside
•Season the chicken breast on both sides with salt and pepper.
•In a large sauté pan melt the butter over medium heat
•Add the chicken breasts and cook , turning once, until browned (about 5 minutes
per side)
•Tilt the pan to pour off excess fat
•Add 2 tablespoon water and shake to deglaze the pan
•Push the chicken to one side, add the pepper jelly mixture and the lemon
juice, shake the pan to coat the chicken
•Cook until the sauce is reduced to a glaze (about 30 seconds)
