This is a delicious chicken dish that i have enjoyed for quite some time...
Delicious Chicken Picatta
Serves: 4 Difficulty Level: 3 (of 5) Prep Time: 5 minutes Ready In: < 30 minutes
INGREDIENTS:
• 4 Boneless, skinless chicken breasts (4 oz. each)
• 1/2 Cup flour
• 1/2 Teaspoon each, salt, pepper and paprika
• 1 Cup chicken broth
• 4 Tablespoons fresh lemon juice
• 1 Tablespoon capers, drained
• 2 Tablespoons olive oil
• 1/4 Cup shredded parmesan cheese
PROCEDURE:
• Mix flour, salt, pepper and paprika and put in a shallow bowl. Put chicken between 2 sheets of plastic wrap, one at a time and pound lightly with a mallet or rolling pin until 1/2" thick.
• Press pounded chicken breast into flour mixture until lightly coated, shake off any excess flour.
• In a large saute pan heat olive oil over medium -high heat and brown each side (approximately 2 minutes per side)
• Remove from pan and keep warm. Reduce heat to medium, add lemon juice to de-glaze pan and loosen any browned flour bits. Add chicken broth and cook until reduced by 1/2. Add capers (if using) stir to mix.
• Add sauteed chicken back to sauce and turn once or twice to coat with sauce, garnish with parmesan cheese.
• Serve over rice
