Who doesn't love melted chocolate and homemade cookies? These Valentine's-inspired cookies are a perfect combination of the two and make for a great dessert, snack, or even class-party offering. 

Serves: ~24

Ingredients:
  • 3 cups flour
  • 1 cup sugar
  • 1 cup butter, softened
  • 1/2 cup Valentine sprinkles (or a mix of red, pink, and white sprinkles)
  • 1 tablespoon shortening
  • 1-1/2 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 eggs
  • 8 oz semi-sweet chocolate chips
Directions:
  1. Beat together the butter and sugar until smooth. Add in the eggs one at a time, beating well after adding each one.
  2. Add the vanilla extract and salt, then add in the flour a little at a time until well combined. 
  3. Shape the dough into a disc and wrap it in saran wrap. Chill in the refrigerator for at least one hour.
  4. Preheat the oven to 350 degrees. Line a baking sheet with parchment paper or a nonstick baking mat
  5. Divide the dough in half and place one half back in the plastic wrap in the refrigerator. Roll the remaining half out to about a half inch thickness. Using a heart-shaped cookie cutter, cut out cookies and place them on the baking sheet. Cookies should be placed about an inch apart. Once the baking sheet is full, chill the cookies for 15-20 minutes before baking them for 12-15 minutes or until the edges of the cookies start to brown.
  6. Let cookies cool completely. Repeat with the other half of the dough. 
  7. Heat the chocolate chips and shortening in the microwave 30 seconds at a time until fully melted. Stir until smooth. 
  8. Dip half of each cookie in the melted chocolate, tapping gently against the side of the bowl to dislodge any excess. Place the cookie on a sheet of parchment paper and quickly add the sprinkles to the chocolate side of the cookie. 
  9. Let the chocolate dry completely before serving or storing.
Note: The dough can be frozen if not baking immediately. Just thaw it in the refrigerator before using.
