It is no secret that pan drippings and the juice left from roasting make the best tasting sauces or gravies. Lets see if we can make them a little more healthy by losing some of the calories and fats.
There are several ways to accomplish this.
- After removing the meat or poultry, and vegetables if any, pour drippings into a pan or bowl. Put the juices into the refrigerator/freezer until they congeal and then simply collect the fat that has hardened on the top.
- Along the same lines but a bit faster would be to add several ice cubes to the drippings to cool them quickly and help fat harden. Now, using a slotted spoon, remove and discard fat.
- 3. The last method is a little more time consuming and labor intensive. Using a white paper towel skim the fat by lightly brushing over the top of the juices and rotating towel to clean as necessary. A brown paper sack or even chilled lettuce leaves can be used for this method.
