
For those who would choose a "non-traditional" cranberry
relish.
DRY CHERRY CRANBERRY
RELISH

INGREDIENTS:
•1 cup dry tart cherries, slightly chopped
•1 cup Ruby port wine
•½ cup water
•1(12 ounce) package fresh cranberries
•1 (12 ounce) jar red currant preserves
•¼ cup Gran Marnier or orange liqueur
PROCEDURE:
•In a 4-quart sauce pan over low heat bring cherries, port and
water to a simmer.
•Continue to simmer until almost all the liquid has been absorbed, about 30
minutes total.
•Add remaining ingredients to the pan and simmer for another 20 minutes, or
until the cranberries have begun to burst.
•Remove from heat. Cool. Store in refrigerator overnight and up to a week
before serving.
•Any left-overs go good on biscuits or as a topping for pancakes in the
morning.
