Ingredients:
- 6 eggs
- 1 lb. ground sausage
- 1 (20oz) bag frozen hash browns, thawed
- 1 red bell pepper, cored and diced
- 1 medium white onion, peeled and diced
- 3 cloves garlic, minuced
- 2 cups shredded cheddar cheese
- 1/3 cup milk
- 1/4 teaspoon black pepper
Directions:
- Preheat the oven to 375°F.
- Cook the sausage in a pan on medium-high heat until browned, crumbling and separating it as it cooks. Once browned, remove the sausage from the pan with a slotted spoon and transfer it to a large mixing bowl.Keep around one tablespoon of grease in the pan and discard the rest.
- Add the onion and red pepper to the pan and sauté for 5 minutes or until cooked. Then, add in the garlic and cook for an additional 1-2 minutes. Add the veggies and garlic to the mixing bowl.
- Add the hash browns and 1-1/2 cups of the cheddar cheese to the mixing bowl and toss to combine.
- In a separate bowl, whisk together the eggs, milk, and pepper until combined. Then add this to the bowl with the hash browns, sausage, cheese, and veggies, and stir to combin.
- Pour the mixture into a greased baking dish and top with the remaining 1/2 cup of cheese. Cover the top with aluminum foil and bake for 20 minutes.
- Remove the foil top and bake uncovered for an additional 10-15 minutes or until the top of the hash browns are slightly brown.
- Remove the dish from the oven and let cool for 5 minutes before serving.
