FRENCH ONION SOUP
Serves: 4 Difficulty Level: 2 (of 5) Prep Time: 15 minutes Cook Time: 45 minutes Ready In: 1 hour
INGREDIENTS:
• 3 Tablespoons butter
• 2 Tablespoons olive oil
• 2 Cups chicken stock
• 2 Cups beef stock
• 2 Large onions, thinly sliced
• 2 Cloves garlic, minced
• 1 Teaspoon fresh thyme, de-stemmed
• 2 Oz. sherry wine
• 4 Slices french bread, slightly toasted
• 4 Slices Provolone cheese
PROCEDURE:
-In a large sauce pan, heat butter and oil over medium heat.
-Add onions and reduce heat to "sweat" onions until they have softened.
-Continue to cook onions, stirring frequently until they are evenly browned and fragrant.
-Heat the stocks in a separate sauce pan.
-Once the onions have caramelized, add garlic and thyme.
-Stir to incorporate.
-De-glaze the pan with sherry, add the hot stock.
-Slowly simmer the soup until it becomes rich and thickened, about 20-30 minutes.
-To finish, ladle the soup into individual french soup bowls, top with toasted bread a slice of cheese.
-Place under broiler until cheese has browned and begun to bubble.
