Fresh Peach Pie

Fresh peach pie is one of the best things about peach season. This recipe is easy to make, tastes great, and is perfect as a dessert on a warm night or as a contribution if you need to bring something to a potluck or work event. 

  • 6-8 ripe peaches, peeled and sliced
  • 3oz package of peach Jell-O powder
  • 9-inch pre-baked pastry pie shell
  • 3 tablespoons cornstarch
  • 1 cup water
  • 1 cup sugar
  • Optional--cool whip or vanilla ice cream
  1. Cook the water, sugar, and cornstarch in a pan on medium heat until it is thick and clear. Then add the peach Jell-O and stir until it has dissolved. 
  2. Let the mixture cool a little bit before spreading a thin layer on the base of the pie shell.
  3. Add the peach slices and remaining sauce to the pie shell.
  4. Let the pie chill in the refrigerator for a few hours before serving. Serve with optional cool whip or ice cream if desired.
