Around our house for Thanksgiving this dish was as traditional as the turkey itself.

GREEN BEANS ALMANDINE

Serves: 8-10 Difficulty Level: 2 (of 5) Prep Time: 5 Minutes Ready In: Less than 30 Minutes

INGREDIENTS:

•1 1/2 pounds fresh green beans, trimmed
•¼ cup unsalted butter
•1 teaspoon freshly grated nutmeg
•Salt and freshly ground black pepper
•1 1/2 cups thinly sliced almonds

PROCEDURE:

•In large stockpot over high heat, bring 6 quarts salted water to a full boil.
•Add beans to the water and boil for 2 to 3 minutes. Do not over cook.
•Immediately drain and chill in ice water. Drain well. Set aside.
•About 10 minutes before serving, heat 12-inch sauté pan over high heat .
•Add butter. Melt butter until it becomes brown.
•Add nutmeg, salt, pepper, and almonds to the pan.
•Allow the almonds to brown.
•Add green beans and turn frequently with tongs until the beans are heated through.
•Adjust seasoning if desired and serve immediately.

Chef Note: Since this became a family tradition they have come out with a smoked almond, have used it and got good reviews. Sshhhh! Don't tell Mom.
