A braising pan or tilt skillet is a commercial kitchen appliance that can cook large quantities of food in a variety of ways, including braising, roasting, frying, steaming, boiling, and grilling. It can even move easily from one cooking method to another. Its versatility and convenience make it useful in nearly any commercial facility.

Better Food, Easier Operations

A tilt skillet allows you to cook food by whatever method is most flavorful or convenient. Even heating from the bottom and sides, plus an attached lid, helps foods cook evenly and maintain their juices, flavor, and nutrients.

A braiser can save you time in two ways. Its large capacity is ideal for preparing substantial quantities of food in a single batch, and its multiple heating surfaces can reduce cooking times by 20% or more.

The tilting mechanism assists in transferring cooked food into serving or storage dishes safely and with minimal spillage. Typically, a manual lever or electric motor allows the operator to position and lock the pan at a variety of angles.

Convenient Maintenance

The tilting feature makes a braising pan easier to clean than some other kitchen equipment. Once the unit is cool, you can tilt the pan up to conveniently drain out oil or other liquids, spray and scrub the cooking surfaces, and tilt again to drain the cleaning solution. Then simply rinse, dry and wipe down the surfaces to make the skillet ready for use again.

Tilting pans are designed to accommodate large production needs. The most popular units for commercial kitchens hold 30-40 gallons and are constructed as free-standing units on a stainless steel frame. Smaller countertop units are available for kitchens with lower volume needs.

Tilt skillets are manufactured in gas and electric models to fit your utility needs.

Most models have a pour spout or full-width pour lip on the front rim of the pan to help guide food into other containers when the skillet is tilted. Depending on how you plan to use your tilt skillet, you may want a model that includes a receiving pan support under the pouring lip to hold steam table trays for filling. The most convenient pan supports are retractable when not in use.

Some braising pan are also equipped with a draw-off valve with an integral strainer, so that liquids can be decanted from the bottom of the pan while it is horizontal.

A steam inset pan can be useful if your kitchen frequently steams large quantities of vegetables or rice.
