It's March which means that not only has March Madness begun, but so has the countdown to March 17th, also known as St Patrick's Day. This year, the holiday falls on a Tuesday. Because of this, imbibing a lot of alcohol to celebrate may not be feasible for a lot of people. However, that doesn't mean you have to forgo participating in the celebrations altogether. This beer-infused cheese dip strikes the perfect balance for those who still want to have Guinness on St Patrick's Day but can't have a few beers. It's also a great snack or appetizer for those who do plan on having a beer or two with friends after work.

Ingredients:
  • 2-1/2 cups sharp cheddar cheese, grated
  • 1/4 cup Guinness
  • 8oz cream cheese, softened
  • 2 tablespoons half-and-half
  • 2 tablespoons parsley
  • 1 teaspoon Dijon mustard
  • 1 teaspoon garlic, minced
  • 2-3 scallions, chopped
  • Sea salt and black pepper, to taste
Directions:
  1. In a blender or food processor, mix together the cream cheese, mustard, cheddar cheese, and half-and-half. Mix until smooth. 
  2. While the machine is running, slowly add in the Guinness and blend until combined. 
  3. Add the scallions, parsley, garlic and salt and pepper. Blend until this is all well combined. 
  4. Transfer the dip to a bowl, cover, and let chill for at least one hour prior to serving.
