Here is a quick and easy shrimp recipe that would please any seafood lover in the family.

HERB-CRUSTED SHRIMP

Serves: 4 Difficulty Level: 2 (of 5) Prep Time: 10 Minutes Ready In: Less than 30 Minutes

INGREDIENTS:

•16–18 sprigs fresh cilantro
•12–15 fresh basil leaves
•12–15 fresh mint leaves
•10–12 sprigs fresh parsley
•2 cloves fresh garlic
•1 tablespoon extra-virgin olive oil
•1/2 teaspoon salt
•1/4 teaspoon pepper
•1 lemon (rinsed)
•1 1/2 pounds large peeled/de-veined shrimp, thawed if needed

PROCEDURE:

•Preheat oven to 450°F.
•Rinse herbs, pat dry, and chop finely (1/4 cup of each); chop garlic.
•Place herbs, garlic, oil, salt, and pepper in large zip-top bag.
•Squeeze juice of lemon (1 1/2 tablespoons) into bag. Knead bag to blend ingredients.
•Pat shrimp dry; add to herb mixture. Knead with fingertips until shrimp are evenly coated.
•Arrange in single layer on baking sheet.
•Place shrimp in oven and bake 3 minutes.
•Stir shrimp (to turn) and cook 3–4 more minutes or just until shrimp turn pink and opaque. Serve.
