Ingredients:
- 4 cups milk
- 1-1/4 cup sugar
- 1 cup heavy whipping cream
- 12 eggs
- 2 teaspoons vanilla extract
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cinnamon
- Salt, to taste
- Extra nutmeg for garnish (optional)
Directions:
- Whisk the sugar and eggs in a mixing bowl until they are thoroughly combined.
- Transfer to a saucepan and stir in the milk, cinnamon, nutmeg, and dash of salt.
- Heat the mixture on medium-low heat, stirring constantly to prevent the milk from burning. The mix should thicken as it heats up.
- Use a candy thermometer to monitor the temperature and remove the pan from heat when it has reached 160 degrees. Slowly whisk in the heavy whipping cream and vanilla extract.
- Let the mixture cool slightly before tasting it. If desired, add more spices. Then, transfer to an airtight container. It should continue to thicken the further the mixture cools.
- Refrigerate overnight or until thoroughly chilled.
- Serve.
Note: To make this recipe alcoholic, simply add bourbon, rum, or whiskey to taste.
