Fruit Juice Pops
Ingredients
- Fruit juice of your choice
- Popsicle molds
- Place silicone molds into a plastic glass to stabilize them and pour the fruit juice in the molds. Be sure to leave a small gap at the top of the mold.
- Place the lids on and freeze overnight or until solid.
For young children, dilute the juice with a bit of water prior to filling the molds.
Use paper Dixie cups, Popsicle sticks, and saran wrap in lieu of Popsicle molds. Simply pour the juice into the cups, cover tightly with saran wrap, and poke the Popsicle sticks through the saran wrap in the middle of the cup. Then freeze.
Frozen Yogurt Bites
Ingredients
- 1 cup yogurt of your choice
- Handful each of fresh raspberries and blueberries or fruit of your choice
- Line a muffin tray or mini muffin tray with cupcake liners.
- Spoon yogurt into the bottoms of the liners until all yogurt is gone.
- Add a few pieces of fresh fruit to each liner, pressing them down slightly into the yogurt.
- Freeze for a few hours or until set solid.
- Remove the liners and serve or bag up the bites and place back into the freezer until ready to eat.
Banana Chocolate Chip "Ice Cream" Bites
Ingredients
- 6 very ripe bananas
- 3/4 cup mini chocolate chips, divided
Directions:
- Line a baking sheet with parchment paper. Slice the bananas into roughly half inch sized pieces and lay flat on the baking sheet. Cover with saran wrap and place the sheet in the freezer for an hour to an hour and a half.
- Remove the frozen bananas from the freezer and let sit for about five minutes. The bananas should be slightly softened but still frozen.
- Place the banana slices in a food processor or blender and pulse or blend until smooth and creamy. Stir in a half cup of the chocolate chips.
- Grease a mini muffin tray with nonstick cooking spray or line it with cupcake liners and spray the liners. Scoop the banana mixture into each cup until almost full and sprinkle with the remaining chocolate chips. Place the muffin tray in the freezer for at least an hour.
- Remove the tray from the freezer and pop each bite out with a butter knife. Stack the bites in a freezer safe container, making sure to place a piece of parchment paper in between each layer to prevent them from sticking to each other.
- When ready to serve, let the bites sit out for a few minutes before eating.
