LINGUINE WITH GARLIC OIL

* No real prep work involved. Because you work so fast, make sure you have all
the ingredients at hand and ready to go.
INGREDIENTS:
• 1 Pound Linguine pasta (prepared as per box instructions)
• 1 Cup extra virgin olive oil (the good stuff)
• 4 Cloves of garlic (peeled)
• 1/4 Teaspoon dry hot chili pepper
• 1/4 Cup Italian (loose leaf) parsley
• 1/2 Teaspoon salt
• 1 Teaspoon fresh cracked pepper
PROCEDURE:
• Sauté garlic in olive oil, over medium-high heat, do not allow to burn, you
are looking for the color of butter scotch. Remove from pan and reserve.
• Mash the reserved garlic with the back of a fork, return mashed garlic to
oil.
• Cook for 1 minute to infuse the garlic into the oil.
• Add dried chilies and cook for additional minute, stirring constantly.
• Add parsley and salt, cook another minute while stirring.
• Add cooked pasta, toss well, arrange on heated serving platter and sprinkle
with black pepper.
• Very few Italian dishes are served without cheese, this is one of them, you
do not want to "mask" the true flavor of the olive oil.
• A variation of this dish is to add sautéed chicken or shrimp.
