Halloween is tomorrow which means there is time for one more Halloween-inspired treat today. These monster eye cupcakes are not only tasty but are also spookily cute.
Ingredients:
- 1 lb powdered sugar
- 1 teaspoon vanilla extract
- 3 sticks butter, softened
- Heavy cream or half and half
- Devil's food mix
- Food coloring
- Candy eyes
Directions:
- Make the cupcakes according to the directions on the box.
- While the cupcakes are cooling, prepare the icing. Whip together the butter and powdered sugar until thoroughly mixed.
- Once mixed, add in the vanilla extract.
- Add in the heavy cream or half and half a little at a time until the mixture has reached your preferred consistency.
- Separate the buttercream into four bowls and add a different food coloring to each bowl.
- Frost the cupcakes.
- Add in the candy eyes. Serve.
