Why use a convection oven?
One reason is a convection oven is much more eco-friendly than other ovens. Convection ovens have an evenly-distributed heating mechanism. A fan at the bottom circulates hot air to the top, evenly cooking the item—this eliminates the problem of hot spots that may occur in conventional ovens.
Because they evenly-heat the surface area of the item, most convection ovens have less time needed to cook. This typically reduces 20% of energy usage by most conventional ovens. This type of oven cooks around 25-30% faster than conventional ovens. Convection ovens cook food 25% less than a microwave. There are really no major changes from conventional ovens to convection. It would behoove those using a convection oven to remember that their food should be cooked at less time than what the recipe calls.
Since less time is needed for convection ovens, food doesn’t dry out and thus retains its flavor and taste. This also helps maintain the nutrients and vitamins of the foods. Most have a catching tray that helps catch some of the oil that drips away from the food item, which consequently makes food healthier than usual.
The circulating heating mechanism allows for the oven to cook at a lower temperature, which keeps the food from often burning. These ovens are ideal for cooking more than one type of food at a time without causing a mixing of flavors.
These ovens are not suitable for deep dishes and casseroles. These dishes tend to block air flow from the bottom. If a recipe calls for a deep pan, this instance is much better for conventional ovens.
