Latkes, also sometimes referred to as potato pancakes, are frequently talked about during the holiday season as Hanukkah often falls near Christmas. For example, this year Hanukkah starts at sundown on December 23rd, two days before Christmas. Regardless of whether you celebrate Hanukkah, Christmas, or nothing at all, latkes are a tasty and easy recipe to add to your recipe repertoire. 

Ingredients:
  • 4 large Yukon Gold potatoes, peeled
  • 1 small onion, peeled and halved
  • 1 large egg, lightly whisked
  • 1/3 cup oil
  • 3 tablespoons butter
  • Black pepper and salt, to taste
  • Sour cream
  • Applesauce
Directions:
  1. Grate the onion on the coarse side of the grater. Wrap the shredded onion in a towel and squeeze over a large bowl or the sink to remove the excess moisture. Once done, transfer the onion to a large bowl.
  2. Repeat with the potatoes, adding them to the onion when finished. 
  3. Toss the potatoes and onion to combine them before adding in the egg. Once the egg is fully incorporated, season the mixture with salt and pepper. 
  4. Heat the oil and butter in a large skillet on medium-high heat. Scoop 1/3 cup portions of the potato mix into the skillet and use a spatula to slightly flatten them. This will need to be done in batches until the mix is gone. Cook until golden brown and crispy, around 3-5 minutes per side. 
  5. Serve immediately with sour cream or applesauce on the side.
