
Here is a great Mardi Gras themed dessert...
NEW ORLEANS STYLE PRALINE BREAD PUDDING
Serves: 12 Difficulty Level: 2 (of 5) Prep Time: 15 minutes Ready In: < 1 hour
INGREDIENTS:
• 2 (12 OZ.) cans evaporated milk
• 1 Cup water
• 6 Eggs (beaten)
• 1 1/2 Cups sugar
• 1/2 Cup rum
• 5 Tablespoons vanilla
• 5 Cups stale french bread cut in 1/2" cubes (I cut it the night before and leave it on counter)
• 1 Cup chopped pecans
• 1 Cup flaked coconut
• 1/4 Pound (1 stick) butter, softened
PROCEDURE:
• Preheat oven to 350 degrees
• Pour milk into large mixing bowl, rinse cans with the 1 cup of water, add to milk in bowl.
• Add eggs, stir in sugar until well dissolved.
• Add rum and vanilla.
• Place bread in milk mixture, soak until bread is softened.
• Add pecans and coconut and stir well to combine
• Add softened butter, stir
• Pour mixture into a well greased 9" by 13" pan.
• Bake for 30-40 minutes, until set and browned on top
• Serve with praline sauce and whipped cream
PRALINE SAUCE:
• 1 Cup sugar
• 1 Tablespoon corn starch
• 1 Cup water
• 1 Tablespon butter
• 2 Tablespoons rum
• 1 Teaspoon vanilla
• 1/2 Cup chopped pecans
Mix sugar and corn starch in sauce pan, Stir in water and rest of ingredients except the rum and pecans, Stir until all lumps are dissolved, Simmer over low heat until it thickens, add rum and pecans, cook for ten more minutes.
