RED BEANS AND RICE
Serves: 8 Difficulty Level: 2 Prep Time: 5 minutes Ready In: 3 1/2 hours
INGREDIENTS:
• 2 Pounds dried red kidney beans
• 2 Cups chopped onion
• 3 Cloves of garlic, chopped
• 3 Pounds Andouille sausage (can use smoked sausage)
• 3 Quarts cold water
• White rice
PROCEDURE:
• Soak beans overnight
• Drain water and add beans to an 8 quart stock pot.
• Add enough cold water to cover beans
• Add chopped onion and garlic, bring to a boil
• Cook for 1 hour, then add the sausage cut into 1" chunks and more water if needed.
• Turn down to simmer (slight bubbling action) and cook for 2 hours or until beans have soften.
• Remove 2 cups of beans (with out juice) and mash by hand or pulse in food processor until smooth
• Return mashed beans to pot (this makes a creamy gravy)
• Prepare rice as per package instructions.
• When beans are done, should be "soupy" but not watery, serve over rice & enjoy!
