
This is a very flavorful pork recipe that i have enjoyed for a long time.
ROASTED PORK LOIN WITH ORANGE MARMALADE GLAZE
Serves: 6 Difficulty level: 3 (of 5) Prep Time: 10 minutes Ready In: 1 3/4 hrs.
INGREDIENTS:
• 4 Lbs. Center-cut pork loin roast
• 1 Tablespoon olive oil
• 2 Teaspoons chopped fresh rosemary
• 1 Cup dry white wine (I used Sauvignon Blanc)
• 1 Cup orange juice
• 1/2 Cup Orange marmalade
• salt and freshly ground black pepper
PROCEDURE:
• Preheat oven to 350 degrees
• Place the pork loin on a rack in shallow roasting pan. Brush meat with olive oil and sprinkle with salt, pepper and rosemary. Pour wine and orange juice into bottom of roasting pan. Roast for 1 hour.
• Remove pan from oven and spoon 1/2 cup of pan drippings into a small bowl. Add the marmalade and mix well. Pour this mix over the roast and return to oven.
• Continue to roast for 45 minutes, spoon basting with pan juices every 15 minutes, until a meat thermometer reaches 150 degrees F.
• Remove from oven, cover with foil and let the meat rest for 15 minutes before slicing.
