Who doesn't love a quick, easy, all-in-one dinner? This recipe for chicken fajitas only required a baking sheet--that's it! No pots, no pans, no big mess to clean after dinner. Who said cooking couldn't be easy?

Serves: ~4

Ingredients:
  • 1-1/2 lb. chicken breast tenders
  • 1 yellow bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 1 red onion, sliced
  • 1-1/2 tablespoons extra virgin olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Black pepper, to taste
  • Tortillas
  • 1-2 limes
  • Fresh cilantro (optional)
Directions:
  1. Preheat the oven to 425°F.
  2. In a large mixing bowl, combine the chicken, onion, bell peppers, olive oil, black pepper, and spices. 
  3. Toss to combine. 
  4. Spray a baking sheet with nonstick cooking spray and spread out the chicken, onion, and peppers on the sheet. 
  5. Cook for around 20-25 minutes or until the chicken is cooked through. In the fast five minutes of cooking, wrap the tortillas in aluminum foil and warm them in the oven (optional).
  6. Take the tortillas out and turn the oven to the broil setting. Broil the chicken, onion, and peppers for an additional 1-2 minutes, making sure not to burn the veggies. 
  7. Squeeze the limes over the fajita mix while still hot and top with the cilantro if desired.
  8. Assemble and serve in the warm tortillas.
