This southern classic is sure to appeal to even the most discriminate palette.


SOUTHERN STYLE SHRIMP & GRITS

Serves: 6 Difficulty level: 3(of 5) Prep Time: 15 minutes Ready In: < 1 hr.

INGREDIENTS:

• 6 Thin sliced bacon (preferably Applewood)
• 8 Scallions, chopped (reserve some tops for garnish)
• 3 Tablespoons lemon juice
• 48 Medium shrimp (peeled and deveined)
• 4 Cups chicken broth
• 1 Cup half & half
• 4 Tablespoons hot sauce (or to taste)
• 1 Cup grits (preferably stone-ground)
• 1 Cup shredded cheese (I prefer cheddar or american, but feel fee to try others)

PROCEDURE:

• Wash and rinse grits, put in medium sauce pan, Add chicken broth and half & half cook as directed on package.
• When grits are done stir in shredded cheese and cover to melt.
• In a large sauté pan, fry bacon until it is crisp. Transfer to a paper towel, when cool crumble into medium pieces.
• Add scallions, lemon juice, shrimp and crumbled bacon to the bacon drippings.
• Sauté for 1 minute over medium heat, add hot sauce and remove from heat.

To Serve:

In a shallow soup plate cover the bottom with cheese grits, top with shrimp mixture (8 shrimp per serving) & garnish with 1/2" biased cut scallion tops.
