I had this for dinner last night... it was so good I smacked my momma (only lightly, of course, because I love my momma).

SPANISH-STYLE GARLIC SHRIMP
Serves: 4 Difficulty Level: 2 (of 5) Prep Time: 15 minutes Ready In: <30 minutes

INGREDIENTS:
• 4 Tablespoons butter, divided
• 1 Pound medium shrimp, peeled and deveined (equally good using scallops)
• 1/2 Teaspoon salt
• 2 Cloves garlic, finely chopped
• 1/2 Jalapeno pepper, seeded and finely chopped
• 1/4 Cup freshly chopped cilantro (can use parsley)
• 1 Tablespoon fresh lime juice

PROCEDURE:
• Melt 1 tablespoon butter in a saute pan over high heat and cook shrimp with salt, turning once, 2 minutes or until shrimp are almost pink. Remove shrimp and set aside.
• Melt remaining 3 tablespoons butter in same pan over medium-low heat and cook garlic and jalapeno pepper, stirring occasionally, 1 minute. Return shrimp to skillet. Stir in cilantro and lime juice and heat 30 seconds or until shrimp turn pink
• Serve over angel hair pasta or cooked rice.
