Now Ya Cookin'

Fresh strawberries are one of late spring's annual recurring joys. This cool parfait is easily prepared without turning on any heated appliance, and can be customized to the age of your guests.

Ingredients
- 8 cups sliced strawberries (Fresh is best.)
- 1/4 cup granulated sugar
- 1 teaspoon ground ginger (Optional but wonderful!)
- 1 (8 oz) container of fat free sour cream
- 1 (8 oz ) container of low fat cream cheese, softened
- 2 tablespoons chocolate syrup (Amaretto liqueur can be substituted for adults.)
- 1 cup amaretto biscotti crumbs
- 1 (8 0z) container of low calorie whipped topping, thawed
Preparation
- Place 2 cups of strawberries, ginger, and sugar in a blender or food processor, and mix to a compote consistency. Refrigerate while working the remainder of the ingredients.
- Combine sour cream, cream cheese, and chocolate syrup in a medium bowl; stir well with a whisk. Spoon a layer of biscotti crumbs into parfait glasses. (Depending on the size of your glasses, this mixture will make between half a dozen and a dozen parfaits.) Next, add a layer of your chilled strawberry compote, and then a layer of strawberry slices, followed by a layer of sour cream filling. Repeat the entire process. Top each parfait with the remaining strawberry compote. Refrigerate for at least 2 hours. Decorate parfaits with chocolate syrup and a biscotti if desired.
