Frozen Peach Beillini (serves 4)
Ingredients
- 3 cups fresh or frozen peaches, diced
- 3 cups Prosecco, Champagne, or other sparkling wine
- 1-1/2 tablespoon sugar
- 1 cup ice
- Put the peaches, sugar, and water into a blender and blend until smooth.
- Add in the wine and pulse until the wine has been fully integrated.
- Divide into glasses and top each glass with a peach slice for garnish.
Blackberry Whiskey Lemonade (serves 4)
Ingredients
- 12 oz. fresh blackberries
- 1/2 cup sugar
- 1/2 cup water (optional, see notes)
- 1 cup lemon juice
- 1 cup whiskey
- 1 large rosemary sprig
- 1 cup tonic water or sparkling wine (optional, see notes)
For simple syrup
- Place the blackberries, sugar, and water (if using) in a small saucepan over medium heat.
- Cook for 15-25 minutes, stirring occasionally, until the blackberries have softened and the mixture has become a thickened syrup.
- Strain the syrup through a mesh sieve to separate out any seeds or remaining lumps.
- Let the syrup cool on the counter for about 20 minutes before making the drinks.
- Combine the simple syrup, lemon juice, and whiskey in a large shaker and add a handful or so of ice. Depending on the size of your shaker, this may need to be done in two batches.
- Shake to combine and chill the drinks.
- Pour over ice in a glass. Top each glass with a splash of tonic water or sparkling wine (optional) and serve immediately.
Add a half cup of water when making the simple syrup to cut the sweetness.
Lighten or stretch the lemonade by topping each glass with a splash of tonic water or sparkling wine.
The simple syrup can be made ahead of time and kept in the refrigerator in an airtight container until ready to use.
Strawberry Basil Margarita (serves 2)
Ingredients
- 1/2 pint fresh strawberries
- 2-3 basil leaves
- 1.5 oz. Cointreau
- 1/2 cup blanco tequila
- 1 lime, juiced (about an ounce)
- 1 tablespoon honey
- Ice
- Kosher salt
- Pour a quarter cup of kosher salt onto a small side plate. Rub the juiced lime rind around the edge of two glasses and then dip each glass into the salt to rim the edges. Fill each glass with ice.
- Place the strawberries, tequila, Cointreau, lime juice, and honey into a blender. Blend thoroughly until the strawberries are pulverized.
- Finely chop the basil and place it at the bottom of a decanter or cocktail shaker. Muddle the basil to release the flavor.
- Add the blended mixture to the decanter and stir vigorously to incorporate the basil.
- Pour the mix into the salted glasses and serve immediately.
