INGREDIENTS:

1 Pound dry fettuccine noodles
1/2 Cup chopped fresh cilantro (reserve 2 T for garnish)
2 Tablespoons minced garlic
2 Tablespoons minced jalapeno pepper (seeds and veins removed)
3 Tablespoons unsalted butter (reserve 1 T for saute)
1/2 Cup chicken stock
2 Tablespoons tequila
2 Tablespoons fresh squeezed lime juice
3 Tablespoons soy sauce
1 1/2 Pounds skinless chicken breast, cut in 3/4" dice
1/4 red onion, sliced thin
1/2 red bell pepper, sliced thin
1/2 green bell pepper, sliced thin
1/2 yellow bell pepper, sliced thin
1 1/2 Cups heavy cream

PREPERATION:

Prepare pasta as per instructions on box.
Cook 1/3 cup cilantro, garlic and jalapeño in 2 tablespoons of butter over medium heat for 4 to 5 minutes.  Add stock, tequila and lime juice.  Bring to a boil and cook until it is reduced to a paste like consistency; set aside.  Pour soy sauce over the diced chicken and let marinate for 5 minutes while you cook onions and peppers in remaining butter over medium heat.  When the vegetables become limp, add chicken and soy sauce, toss to combine and add the tequila/lime paste and cream.  Bring to a boil, boil gently until chicken is cooked through and sauce has thickened (about 4 minutes).  When sauce is done, toss with drained pasta, garnish with reserved cilantro and thin slice of lime.
