Tilapia Fish Tacos

Tacos are an easy, do-it-yourself meal that can feed a family of four or a crowd of twenty with little effort. The many topping options allow you and your dinner guests to easily customize the meal to whatever ingredients you have on hand. Instead of making traditional beef or chicken tacos, try these fish tacos the next time you make tacos for dinner. 

Ingredients:
  • 1 lb. tilapia fillets
  • 1 cup cabbage, shredded
  • 1 avocado, sliced
  • 1 cup pico de gallo
  • 1/3 cup plain yogurt
  • 1/3 cup mayonnaise
  • tortillas
  • 2 teaspoons olive oil
  • 1 tablespoon taco seasoning
  • 2 teaspoons water
Directions:
  1. Heat the olive oil in a skillet over medium heat. Lightly rub the taco seasoning onto both sides of the tilapia. 
  2. When the skillet is heated, add the fish and cook each side for 3-4 minutes or until just cooked through. 
  3. In a small bowl, combine the yogurt, mayonnaise, and water. 
  4. Once fish has cooled slightly, break the fillets into pieces with a fork. 
  5. Assemble the tacos using the tortillas, fish, avocado, cabbage, and pico de gallo, adding a drizzle of the combined white sauce on top. Serve immediately.
