Winter is the perfect time for soup. It's warm, filling, hearty, and cozy. Warm up your standard winter meals with this cheesy soup! This recipe takes classic broccoli cheese soup to the next level by adding in potatoes. 

Serves: around 8


Ingredients:
  • 6 cups broccoli
  • 4 cups chicken broth
  • 3 cups milk
  • 3 cups shredded cheddar cheese
  • 3 large potatoes, cubed
  • 1 yellow onion, chopped
  • 2 tablespoons flour
  • 1 tablespoon butter
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt

Directions:
  1.  In a Dutch oven, melt the butter over medium heat. When the butter has melted, add the chopped onion and cook until softened. Be sure to stir every minute or two to prevent the onion and butter from burning. 
  2. Add in the potato pieces, chicken broth, and salt and bring the pot to a boil. Once at a boil, reduce the heat to a simmer and cook for 8-10 minutes or until the potatoes are soft. Then, using a potato masher or immersion blender, mash the potato and broth mixture until most of the potato chunks have been mashed and combined into the mix. Depending on your preference, you can leave some potato pieces untouched for a chunkier soup or mash them all for a smoother, thicker soup. 
  3. Add the broccoli and milk and bring the soup to a boil again before reducing back to a simmer for another 5-8 minutes or until the broccoli has softened. 
  4. Add the flour and cheese to the soup, adding the cheese in  a cup at a time, stirring until the cheese has completely melted before adding the next cup. Once done, add the black pepper and more salt if needed. 
  5. Serve while soup is hot.
