Welcome to Summer 2010, the Season of the Grill

Summer is at hand, and around our house that means cook-out time…

What are grills? Grills are used to cook food with dry, radiant heat either from above or below. Technically, grilling is when you cook food using high heat over an open flame. Cooking from above is referred to as broiling in the U.S. – but it’s still called grilling the rest of the world over. The difference between grilling and barbecuing is that barbecuing uses lower heat and a closed lid. Some advantages to outdoor cooking might include the following:

Please People, Just Maintain Your Beer Taps Already! It’s Not Hard!

Over the past several decades, small-batch, independently produced beer (sometimes called “craft” beer) has become a major market segment in the beverage industry. Although once controlled almost completely by several big-name “mega-breweries,” the North American beer market is now rife with small but influential breweries, each with their own variety of ales, lagers, and stouts. With new beer being released and new breweries opening every day, offering customers a variety of unique and interesting craft beers has become a highly profitable business venture for many bars and restaurants.

Top Ten Family Vacation Restaurants

As a kid I remember that feeling of excitement that would grow in me as the family vacation would draw closer. The night before we left, I would struggle sleeping, I would wake up early that day, and be in the car ready to go hours before we would pull out of the driveway. As an adult, I still get very excited about vacation. The time to relax, visiting new places, and the food. OH the food! That is my favorite part about vacation as an adult, having the opportunity to try new restaurants. I know, not every restaurant experience is great, but I want to take some time to share a little about my 10 favorite restaurants I have visited traveling this country. And for a bonus, two candy shops in my home state of Virginia that are amazing!

Have You Tried Seasoning Your Pizza Stone?

Although once a bit of a rarity in the American foodservice market, artisanal pizza has become quite the trend over the past several decades. â€Å“Craftâ€Â pizza shops have become ubiquitous in our modern cities, and as such, many home cooks have taken to their kitchens to try their hands at making their own homemade pizza. To do so, many people have begun purchasing pizza stones: a simple kitchen gadget that allows one to replicate the effect of cooking pizza in a traditional hearth oven.

Step Up Your Fried Chicken with the R & V Works Cajun Fryer

Chicken, fish or fries this fryer does It all. Brought to you by R&V Works this Super 6 gallon capacity fryer is all you need to fry it up. This fryer comes with 2- baskets so you can load them whatever you may want to fry. This fryer is very versatile and requires very little maintenance, and the quality is phenomenal. The success of these fryers comes from the design of the Burner/Flue. The Burner is positioned 6? above the bottom of the oil reservoir and is at a 45 degree angle. This prevents the food batter from collecting on the burner and allows it to fall to the bottom of the reservoir. Since heat rises, the bottom never gets hotter than 120 degrees, which isn’t hot enough to burn or scorch the batter.

Low Country Boil With The Folks At JES

Some weeks back, Eric swore that he would treat the whole company to a Low Country Boil, and yesterday, finally, he lugged a pair of propane tanks into the warehouse and fired up a big, round metal pot brimmed to the lid with red potatoes, sausages, fresh shrimp, and half-cobs of sweet yellow corn. An hour before closing-time, that spicy shrimpy smell had drifted from the warehouse into our office and hovered, cruelly, right in front of our faces. If you called us last night and we sounded a touch distracted, well, I apologize.

The J.E.S. “Don’t You Quit on Me” Award

As we grow older, it is common that we begin to reflect more often upon the people and events that have led us to our current place in life. Each of us has a unique story: an individual manner of thinking that has been influenced by the people, places, circumstances, hardships, and successes that we encounter and experience in our lives.

Calculating Food Cost

Managing food cost is the most critical aspect of owning a restaurant. Most restaurants bring in most (if not all) of their profit through food revenue, making the balance between ingredient purchasing and menu pricing an obviously important part of running one’s business. Among the numbers of restaurants that close their doors every year, almost all of them have been due to poor food cost management.
