Welcome to Summer 2010, the Season of the Grill
Summer is at hand, and around our house that means cook-out time…
What are grills? Grills are used to cook food with dry, radiant heat either from above or below. Technically, grilling is when you cook food using high heat over an open flame. Cooking from above is referred to as broiling in the U.S. – but it’s still called grilling the rest of the world over. The difference between grilling and barbecuing is that barbecuing uses lower heat and a closed lid. Some advantages to outdoor cooking might include the following:
Vive la France: We Have Revol Porcelaine!
If I mention French porcelain, you envision pink flowers on a traditional Country French plate. Revol Porcelaine is NOT that French porcelain. Google the phrase “French porcelain” and you’ll find several companies selling examples of said plates. Revol France has its headquarters in Saint-Uze, where the Revol brothers started their business and created Revol porcelain in 1789, during the French Revolution. Revol USA is located in Alpharetta, GA. Very few companies on the planet are thriving after 225 years, let alone still owned by the founding family, but Revol is. They’ve outlasted governments. What makes a business so enduring?

School Kitchen Equipment: A Buying Guide
According to recent census results, public school attendance rates have been increasing steadily since the turn of the millennium. As such, school kitchens are beginning to build and expand to support ever growing numbers of incoming students. With many students relying on the school cafeteria for their daily lunch, it is important that public schools be well-equipped to provide a variety of nutritious and sustaining foods to their students. However, because school kitchens differ from restaurants in that they are not necessarily profit or marketing oriented, the equipment requirements can often be somewhat different from typical commercial kitchens.

Chicken, fish or fries this fryer does It all. Brought to you by R&V Works this Super 6 gallon capacity fryer is all you need to fry it up. This fryer comes with 2- baskets so you can load them whatever you may want to fry. This fryer is very versatile and requires very little maintenance, and the quality is phenomenal. The success of these fryers comes from the design of the Burner/Flue. The Burner is positioned 6? above the bottom of the oil reservoir and is at a 45 degree angle. This prevents the food batter from collecting on the burner and allows it to fall to the bottom of the reservoir. Since heat rises, the bottom never gets hotter than 120 degrees, which isn’t hot enough to burn or scorch the batter.

Chef Phil Gives His Take On The Holland Grill
A wise man once told me,”it’s what you learn when you think you know it all that counts”. I never professed to knowing it all, but when it came to grilling food over an open flame I knew I could hold my own. It was only after a recent visit from Chad our representative for the Holland Grill Company , that led me to believe otherwise. He opened my eyes to a brand new concept in char-broiling, while opening my taste buds to some of the most succulent meats I’ve ever had on an outdoor grill.

Introducing Vinfinity, the Future of Wine Serving
We all know that wine has to be stored carefully, but we might not all know why. Oxidation, or the exposure to oxygen in the air, is the sworn enemy of a good wine because wine, just like the fruit it’s made from, turns bad with extended exposure to oxygen. The color and aroma can begin to change within a few hours of opening the bottle, and a bottle of wine which isn’t preserved is generally considered unfit to be served after three days.

Most chefs who cook a lot of meat (especially fish) will likely already be familiar with fillet and boning knives, but those who do not spend their days carefully preparing fine cuts of meat may not have much exposure to this type of blade. These smaller kitchen knives are used to debone and break down fish, poultry, and other cuts of meat, and they feature a variety of distinctive qualities that make them perfect for the job. Although boning and filet knives are often used interchangeably, there are some important differences between the two.

Knife Guide: Paring Knives
Along with the chef’s knife, paring knives are one of the most commonly used pieces of cutlery in most home and professional kitchens. Although small, the paring knife is one of the most versatile food preparation tools in the chef’s arsenal, allowing one to chop, peel, slice, and carve foods with higher degrees of accuracy than larger knives. As such, paring knives are most commonly used for tasks that require careful detail, such as removing seeds from peppers, de-veining shrimp, cutting garnishes, and more. The smaller size of a paring knife allows it to be more carefully manipulated to achieve precise or intricate cuts that would normally be difficult with a larger blade.

Knife Guide: Chef’s Knives
Any professional or home chef can attest to the importance of a sturdy, dependable chef’s knife. Also known as a French knife or a cook’s knife, the chef’s knife is one of the most common cutting tools used in food preparation, particularly in Western kitchens. A good chef’s knife can be used to cut meat, slice vegetables, and chop herbs, among a variety of other uses. But with this versatility comes the inevitable confusion of choosing which knife to buy when shopping through all of the options and variations that the industry has to offer, especially if this is your first big knife investment. But don’t let that scare you away to a land of low-quality “budget” knives. Arming yourself with a bit of knowledge about exactly what a chef’s knife is and how it is used is a quick and easy way to narrow the search.

Preventative Maintenance Can Save Your Commercial Ice Machine
Knife Guide: Meat Cleavers
Cleavers are rugged, rectangular-bladed knives that are most commonly used for quickly chopping through bone in large cuts of meat. Although the term “meat cleaver” has come to be used almost universally in reference to the knife, they are also used for quickly chopping up large fruits and vegetables (such as squash or various melons) that would otherwise be unwieldy with regular kitchen knives. The broad side of the knife also makes it ideal for crushing ingredients like garlic or ginger during food preparation, and the blunt, flat edge on the back of the blade can sometimes be used to tenderize meats in the absence of a traditional meat tenderizer. But despite some of its more versatile uses, the cleaver is designed to do one thing better than any other hand tool: break large, difficult pieces of food into smaller, more manageable pieces of food.
This Story of American Range Will Thaw Your Cold, Cold Heart
American Range has a wonderful “how we got started” story! During World War II Mourad Demirjian , a plumber in his early 20’s, living on a frozen part of the planet with his wife and children in a time when resources were scarce, decided to keep his family warm. He used diesel fuel and his knowledge of plumbing to work out a constant-drip system of fueling a small heater. As he saw this was working, he developed flues to release the fumes, and finally learned how to direct air circulation to warm his entire house. When neighbors visited, they were impressed and wanted this same luxury, so a new career, building space heaters, was born. He added windows so his customers could watch the flame and a flattop for warming food. In the 1960’s, his family immigrated to the US, and used his technology to branch into making cooking equipment. By the early 1970’s, American Range existed, and his son is running the company today. Those basic concepts of steady heat, even air circulation, proper ventilation and cooking space are still blatantly in practice in American Range’s line of convection ovens.

For those of you who are just starting out in the restaurant business, a heated food display is a glass enclosed case that encapsulates and retains heat to keep your already cooked food warm for longer periods of time all while showcasing your food items to customers.

EmberGlo Just Released Their New Top Injection Steamer… Get Excited!
Steamers have always been a great way to lock in the necessary vitamins and minerals that most foods wouldn’t have if boiled or baked. With pressurized injection steamers, food items are impaled by hollow needle shaped injectors. A tube then enters the steam chamber through one of the side walls and sprays tap water through holes on the sides. The water falls onto a heat compression plate and immediately vaporizes the water, which in essence steams the contents inside.
A Powerful, Boilerless, Connectionless, Energy-Efficient Electric Steamer

For many years, Americans have been using boiler steamers in their commercial kitchens. These items proved to be safer than pressure steamers. This leads to scale build-up elements that create an insulated coating, which cuts down heat output and can even lead to burn-outs and a higher need for replacement parts.
